Bodacious Mushroom, Leek, Butternut Squash Risotto

One of my favorite things to make is risotto, I wanted to make a healthy version (less cheese, oil and butter). This worked. Mushroom, leek and butternut squash risotto (seasoned with sage, thyme, garlic, nutritional yeast and Miyoko’s vegan butter). Only 1 tbl vegan butter, 3 tbl of nutritional yeast, no oil for 3 servings. 

3/4 cup uncooked arborio rice

3 cups chicken stock

ground sage 1 Tbsp

5 oz mushroom

1 garlic clove(s)

1 cup butternut squash

1 cup leek(s)

1 tbl Miyoko butter

I sauteed the onions and mushrooms in water rather than oil, added the “butter” and nooch to finish.

Bodacious Chickpea Rigatoni topped with Arabiatta Sauce

Tasty lunch, chickpea rigatoni topped with Arabiatta sauce (seasoned with fennel salt, basil,marjoram and tomato paste) topped with Nooch (that is nutritional yeast). 

Best 99 cents I ever spent. If you want to try this pasta I picked it up at Grocery Outlet for 99 cents a bag (regularly 9.99 a bag). It’s a very tasty pasta. Cooks in 4 minutes too.

Bodacious Brazilian Black Bean Soup


A keeper, Brazilian Black Bean Soup with fresh pico de gallo. Stellar recipe, only 1 point per cup and full of flavor!!!! Black beans, onions, carrots, red bell pepper, orange juice, garlic, cumin and cayenne. No oil in this one either, sauteed the vegetables in water.
