Bodacious Mushroom, Leek, Butternut Squash Risotto

One of my favorite things to make is risotto, I wanted to make a healthy version (less cheese, oil and butter). This worked. Mushroom, leek and butternut squash risotto (seasoned with sage, thyme, garlic, nutritional yeast and Miyoko’s vegan butter). Only 1 tbl vegan butter, 3 tbl of nutritional yeast, no oil for 3 servings. 

3/4 cup uncooked arborio rice

3 cups chicken stock

ground sage 1 Tbsp

5 oz mushroom

1 garlic clove(s)

1 cup butternut squash

1 cup leek(s)

1 tbl Miyoko butter

I sauteed the onions and mushrooms in water rather than oil, added the “butter” and nooch to finish.
