Meals were leftovers today. Kamut for breakfast, corn coconut milk soup with grilled cheese. Dinner was not a leftover except for the sauce on the potatoes, potatoes rocked!
Breakfast: Kamut simmered in cashew milk, mixed with ground chia and hemp seeds, topped with tangelos, and blackberry ginger balsamic.
Lunch: Corn, kabocha coconut milk soup with poblano, leeks and asparagus. Grilled vegan cheese sandwich with horseradish dijon.
Dinner: Homefried potatoes with shallots, sun dried tomatoes and poblano peppers topped with chipotle pine nut sauce and a side of sardines.
