April 21, 2019 – Light breakfast: yogurt, fruit, Easter Brunch, Game of Thrones faire ….and more

I am loving the photo food journal that I am doing. So great to have a visual of what I am eating!

Today it was about yogurt for breakfast, I don’t eat a lot of dairy but I wanted to add some yogurt back in to my diet for the health benefits. I knew what was coming, it is Easter Sunday and I knew it was Sunday brunch with friends! That being said, we went to John’s of Willow Glen and it did not disappoint. California omelette with a side of fruit and buttered English muffin. More than that, it was community and laughs with friends for Easter Brunch. Life is good.

And then dinner, Game of Thrones tonight and I wanted something yummy to nosh on while watching GoT…. pinto beans, corn, guacamole and salsa. Yums.


Breakfast: 1/2 cup Greek non fat yogurt, 1 banana, 1 tangelo and a handful (1/8 cup of almonds)

Lunch: California omelette (mushrooms, tomatoes, cheddar cheese and avocado) with fresh fruit and a buttered English muffin

Dinner: Cocoa pinto beans (1 cup dried pinto beans, 1 cup of organic diced tomatoes, 2 cups water, 1 diced onion, taco seasoning, 1 clove garlic, ground cumin, 4 tbl cocoa powder). Saute onions and garlic in IP until caramelized. Add dried beans, tomatoes, water and seasonings. Cook for 40 in the IP. That’s it. Easy peasy. With corn on the cob, guacamole, salsa and crema.
