April 22, 2019 – It’s all about yummy: yogurt, fruit, hash with pineapple and red curried butternut squash soup.

I am loving the photo food journal that I am doing. So great to have a visual of what I am eating!

Today it was about yogurt for breakfast and lunch potato, chickpea pineapple hash. It was the pineapple that elevated the hash to a new level.

Dinner: red curry butternut squash corn soup and grilled cheese.

MEALS

Breakfast: 1 cup Greek non fat yogurt, 1 banana, 1 tangelo

Lunch: Potato, chickpea, poblano, onion, soy chorizo and pineapple hash served with guacamole, salsa and sour cream. It was the pineapple that brought it to a new level. It rocked!!!

Dinner: Red curried butternut squash and sweet corn soup with a vegan grilled cheese with horseradish dijon mustard.
