I am loving the photo food journal that I am doing. So great to have a visual of what I am eating!
Today it was about yogurt for breakfast and lunch potato, chickpea pineapple hash. It was the pineapple that elevated the hash to a new level.
Dinner: cocoa pinto beans with all the trimmings.
Breakfast: 1/2 cup Greek non fat yogurt, 1/2 cup hulled barley, 1 banana
Lunch: Potato, chickpea, poblano, onion, soy chorizo and pineapple hash served with guacamole and pico de galo. It was the pineapple that brought it to a new level. It rocked!!!
Dinner: Cocoa pinto beans with roasted cauliflower, sweet corn, salsa and avocado.
