April 23, 2019 – It’s all about yummy: yogurt, fruit, hash with pineapple and beans

I am loving the photo food journal that I am doing. So great to have a visual of what I am eating!

Today it was about yogurt for breakfast and lunch potato, chickpea pineapple hash. It was the pineapple that elevated the hash to a new level.

Dinner: cocoa pinto beans with all the trimmings.

MEALS

Breakfast: 1/2 cup Greek non fat yogurt, 1/2 cup hulled barley, 1 banana

Lunch: Potato, chickpea, poblano, onion, soy chorizo and pineapple hash served with guacamole and pico de galo. It was the pineapple that brought it to a new level. It rocked!!!

Dinner: Cocoa pinto beans with roasted cauliflower, sweet corn, salsa and avocado.

  • 1/2 cup Greek yogurt, 1/2 cup hulled barley, 1 banana, balsamic reduction
  • Potato, poblano pepper, chickpea, onion, soy chorizo, pineapple hash with avocado and pico de galo
  • Trader Joe's Soy Chorizo - Yummy
  • Cocoa pinto beans, roasted cauliflower and corn on the cob with a side of salsa and guacamole
