April 25, 2019 – It’s all about yummy: yogurt, fruit, poke bowl and tacos. Moved past “the I am fat mindset”, it’s about making healthy choices for what I put in my body!

Perfect day, wonderfully healthy. Winning back my health

I came to an ah-ha moment, this is my life now, I have transitioned to a new lifestyle. I have lost a lot of weight and I am looking at myself with new eyes, I am not fat, I am healthy, look great. That being said, I left WW because I wanted to go mainstream with my diet and stop counting points. So ah-ha moment, take everything I learned in WW and this is my lifelong lifestyle. It is not a temporary solution to lose weight it is permanent! Yes I will keep track of the food that I eat, no I will not go nuts and weigh myself all the time. It is quite freeing!! No more being obsessed with the scale and thinking I need to lose weight because I am fat, it is because I am healthy this is my life. Beyond the I am fat mindset!

Today it was about yogurt, barley and fruit for breakfast and lunch vegan poke bowl with avocado, pineapple, green onions and carrots.

Dinner: Pinto beans with corn on the cob, guacamole, pico de gallo and steamed cauliflower.

MEALS

Breakfast: 1/2 cup Greek non fat yogurt, 1/2 cup hulled barley, 1 banana

Lunch: Vegan poke bowl: Arborio rice (I didn’t have sushi rice in the house so I substituted Arborio and it worked), with avocado, pineapple, steamed carrots and green onion. Mixed with a delicious sauce (I used Braggs coconut aminos as the base – as I didn’t have Tamari in the house either). Making it work.

Dinner: Cocoa pinto beans, steamed cauliflower, guacamole and pico de gallo with corn tortillas.
