April 27, 2019 – It’s all about yummy: avocado toast, soup and more

Perfect day, wonderfully healthy. Winning back my health

Today it was about avocado toast for breakfast, soup and steamed broccoli for lunch and a potluck games night dinner.

Today was instead of ground pepper on my soup I ground grains of paradise. Yes I put the grains of paradise in my pepper mill and it worked perfect!

Grains of paradise is a species in the ginger family,closely related to cardamom and imparts a pungent, black pepper-like flavor with hints of citrus. It is is native to West Africa, but is an important cash crop in southern Ethiopia. The Pepper Coast (or Grain Coast) is a historical coasted region named after this commodity (in the current day Republic of Liberia). Very tasty, I bought it years ago at Boulettes Larder in the city (San Francisco).

MEALS

Breakfast: 2 slices of Trader Joe’s Whole Grain Gluten Free toast topped with a small avocado, 1 tsp maple syrup and a sprinkle of smokey sea salt.

Lunch: Steamed broccoli with cilantro/mint sauce and a bowl of coconut milk, butternut squash corn soup with shredded fresh basil and ground grains of paradise from Boulettes Larder.

Dinner: I made cocoa, chili black beans and a side of pineapple,cucumber, tomato, onion pico as a contribution to a healthy potluck. Very healthy.
