April 30, 2019 – It’s all about yummy: baked potato with mint/cilantro sauce with fruit and tomatoes, creamy tomato pineapple , Taco Tuesday and more. A day of vegan goodness!

Today it was about a baked potato for breakfast topped with mint/cilantro sauce, tomatoes and tangelos

Lunch : Creamy tomato pineapple “pasta”

Dinner: It’s Taco Tuesday – Black bean tacos with tomato/cucumber/pineapple/green onion salsa and guacamole

MEALS

Breakfast: Baked potato with mint/cilantro sauce, tomatoes and tangelos (sprinkled with thyme balsamico). I love this combo of potato with the mint/cilantro sauce (the sauce has a bit of chili garlic sauce in it to give it a bit of heat)

Lunch: Creamy tomato pineapple “pasta”, pasta is yellow squash. Add cashews to the tomatoes when blending the sauce to cream it up. Yes it is a vegan dish.

Dinner: Taco Tuesday – Black bean tacos with tomato/cucumber/pineapple/green onion salsa and guacamole. Yep this one is vegan too!!
