May 3, 2019 – It’s all about yummy: scrambled eggs and green onion, kale salad and soup

Perfect day, wonderfully healthy. Winning back my health

I recently learned that I need to add more Vitamin B12 into my diet. It comes from meat, fish, chicken, eggs and dairy. I have been predominantly vegan for the last 16 months and I need to add some food back to my diet. So increasing the fish and eggs in my daily diet.

Today it was about scrambled eggs cooked with green onion for breakfast

Lunch : kale salad – lots of kale today

Dinner: Kale, potato, onion and chorizo soup

MEALS

Breakfast: Scrambled eggs mixed with green onions over Trader Joe’s Gluten Free Whole Grain toast and ketchup. Who doesn’t love ketchup!

Lunch: Kale salad with red pepper, pineapple, cucumber, green onion and topped with Miyoko’s Herb de Provence Cheese

Snack: Fat Free Yogurt with tangelos and balsamico

Dinner: Kale, onion, potato, soy chorizo soup
