Lunch: Pulled pork tacos (pulled pork is made with jack fruit) topped with roasted bell pepper, pineapple, red onion, jalepeno and corn salsa topped with chipotle sauce.

Dinner: Kale, potato, onion and soy chorizo soup. Kale, mango, cucumber, yellow bell pepper, red onion salad with coconut amino, rice wine vinegar and agave dressing
