Breakfast: Re-fried beans, purple sweet potatoes, sunny side up egg

Lunch : Pulled pork tacos with pico and chipotle sauce

Dinner: Tortilla soup

Breakfast: Roasted purple sweet potato with chipotle sauce, re-fried beans and sunny side up egg.

Lunch: Pulled pork tacos (pulled pork is made with jack fruit) topped with roasted bell pepper, pineapple, red onion, jalepeno and corn salsa topped with chipotle sauce.

Dinner: Tortilla soup (corn, tomatoes, tomato paste, green peppers and red onion) topped with tortilla strips
